Ingredients

    1 tbs olive oil
    1 medium onion
    3 stalks celery
    3 medium tomato seedless and chopped
    2 cups water
    4 potato bake in microwave
    40 oz chicken breast
    .5 cup canola margarine
    .25 cup flour
    3 cups cheddar cheese reduce fat
    2 cups lactose free skim milk

Directions

cook onion, celery and tomato in olive oil, add chicken cook and then add cooked potato and water boil and then simmer in low, in anoter pot add canola butter or margarine and flour milk and cheese make a sauce , add this to the chicken pot and let cook in low for 15 min.
