Ingredients

    1/2 cup Quinoa, uncooked

    1 cup Cucumber, diced
    1/2 cup Red Pepper, diced
    1/2 cup Red Onion, diced
    1 Avocado, diced
    1 cup Spinach, chopped
    1/2 cup Parsley, chopped
    6 oz. Medium or Firm Tofu, crumbled
    1/4 cup Feta, crumbled

    1 tsp Canola Oil
    1/4 cup Lemon Juice
    1/4 Rice Vinegar

    pepper and/or red pepper flakes to taste

Directions

Cook quinoa in one cup of water.

Mix quinoa and all remaining ingredients in a large bowl.

Makes five 1-cup servings
