Ingredients

    1.25 lb 96/4 ground beef, green pepper, 1 onion, 1 can pinto beans (drained), 1 can rotel tomaotes/chiles, 1 can fire-roasted diced tomatoes, chili powder, cumin, s&p to taste, 4 garlic cloves, dash smoked paprika

Directions

brown ground beef. There will not be much fat. You can drain some off and use a small amount to saute the pepper onion and garlic. Add veggies and beef to a large pot. Add in spices to taste, tomatoes and simmer for 20-3- minutes. Add drained rinsed beans ans stir, simmer ~10 more minutes. Makes 6 decent servings, serve with small portion cornbread or 1/2 c. brown rice. I add low-fat shredded cheddar (~1/4 cup) and sliced scallions as a garnish.
