Ingredients

    FOR SALAD:
    2/3 c brown rice
    2/3 c wild rice
    3 c low-sodium chicken broth
    1 orange, peel & Pith removed, segmented and sliced
    10 large basil leaves, sliced into ribbons
    1/4 c minced red onion
    3 tbs chopped pistachios, lightly toasted
    1 tsp finely grated orange zest

    DRESSING:
    1/3 c red wine vinegar
    1/4 c olive oil
    1 tbs orange juice
    1/5 tsp Dijon mustard
    1 tsp honey
    1/4 tsp salt

Directions

Combine brown rice, wild rice & chicken brother in a saucepan and bring to boil. Cover, reduce heat to simmer & cook until all water is evaporated and rice is fully cooked, about 45-55 mins. Remove from heat and cool completely.

When rice is cool, add orange slices, basil, red onion, pistachios & orange zest; mix to incorporate.

Combine red wine vinegar, olive oil, orange juice, mustard, honey and salt in a metal bowl and whisk to incorporate.

Pour over rice mixture and toss to incorporate.
