Ingredients

    1 cup black beans
    1/4 onion chopped
    2 tbsp fresh cilantro
    1/2 cup taco cheese
    Epazote spices
    can Enchilada sauce
    4 Healthy fiber tortillas (Giant Eagle)

Directions

Preheat oven to 375. Spray pan with cooking spray. Mix first 5 ingredients. Fill tortillas. Place in pan. Pour enchilada sauce over filled tortillas. bake 15-20 minutes
