Introduction

A salsa that is great on fish, chicken or in salads A salsa that is great on fish, chicken or in salads
Number of Servings: 20

Ingredients

    3 Roma Tomatoes
    Lime
    1/4 c. finely chopped Red Onion
    2 cloves Garlic
    Cilantro (4 tbsp)
    1 can of black beans (1 cup)
    1 can of kidney beans (1 cup)
    1 small bag of frozen corn (1 cup)
    Green onion (2 stems)
    Salt (about 1 tsp)

Directions

1. Strain and rinse can of black beans and can of kidney beans

2. Finely chop roma tomatoes, red onion, garlic, green onions.

3. Make sure cilantro is rinsed very well. I personally like a lot of cilantro so I use about 1/2 the bunch...chop cilantro (to your taste) making sure to only chop leaves and not stems as much as possible

4. Mix all ingredients together and add 1/2 small bag of frozen corn

5. squeeze juice from entire lime into salsa

6. Add salt to taste, helps break down ingredients

    Had no spice to it. Was a great foundation, I ended up adding spice and peppers to mine. - 9/22/07
