Introduction

Number of Servings: 10

Ingredients

    3 large leeks cut in half legthwise and sliced
    1 Cup baby carrots chopped
    4 or 5 med red potatoes chopped
    3-4 Cups chopped fresh kale
    2 or 3 cloves garlic chopped
    2 Tbsp Olive Oil
    1 Tbsp fresh thyme, or 1 tsp dry
    2 Bay leaves
    10 Cups low sodium vegetable or chicken broth.
    10 oz Smoked Turkey Sausage sliced

Directions

Chop the leeks and and kale, saute them in olive oil over med/hi heat for a few minutes while you are chopping the carrots and potatoes. Add carrots, potatoes, thyme and garlic, saute for about 5 minutes. Add the bay leaves, broth and sausage bring to a boil, then reduce to simmer for 30 minutes. Serve with crusty bread for an easy lunch or light dinner. I like to make a lot of soup, you can easily cut the recipe in half to make less.

    Great recipe. I added 1 Tbs of salt though. Kids loved it, husband loved it... Perfect for the uncharacteristically cold days we've been having in the UK! - 1/6/09

    even my dad loved it, and he HATES anything low fat or good for you :) i added some fat free half and half at the very end to make it really smooth. Yummy! - 8/1/12
