Introduction

This is a quick and delicious nutrient packed soup. High in protein, fiber, vitamin A and C. Low fat, low sugar with moderate to high calcium, iron and potassium. Filling and fantastic! Ingredients

    2 tbsp. olive oil
    6 cloves garlic
    12 oz. Mirepoix Style Blend (I used bag of Kroger brand)
    2 cups frozen spinach
    3.5 oz chopped baby bella or portobella mushrooms
    1 12 oz. can canned chicken breast
    1 25.5 oz Dave's Gourmet Butternut Squash Pasta Sauce
    (I found this delicious jarred sauce at Costco)
    2 cups low sodium/low fat chicken broth
    1 15oz can white kidney beans (I used Trader Joe's)

Directions

Heat 2 tbsp olive oil in large soup pan. Add chopped garlic and chopped mushrooms, saute for 2 min. Add mirepoix, spinach, chicken, pasta sauce, beans and pasta sauce. Bring to light boil. Cook for 20 minutes stirring occasionally. Makes 8 1-cup servings.
