Ingredients

Whole Wheat Flour, 1-1/4 cup
Wheat bran, crude, 1 cup
Baking Powder, 2 tsp
Baking Soda, 1 tsp
Cinnamon, ground, 1 tbsp
Kellogg's All-Bran Cereal, 1/2 cup
Milk, nonfat, 1 cup
Splenda, 1/3 cup
Naturegg eggwhites, 1/4 cup
Canola Oil, 1/4 cup
Salt, 1/4 tsp
Vanilla Extract, 1 tsp
Directions
1) Preheat oven to 375, line or spray muffin cups
2) Mix bran, all-bran, and 1/2 cup boiling water. It will form a mush. add milk, mix.
3) In a large bowl, whisk egg white and splenda. Add oil and vanilla. Add bran mixture and mix well.
4) In separate bowl, SIFT flour, baking powder, baking soda, salt, and cinnamon. Add back any wheat flakes from flour caught in sifter.
5) Fold flour mixture into the bran mixture. Do not overmix.
6) Spoon into muffin cups and bake for 20 minutes or until fork comes out clean.
Makes 10-12 muffins (I make 10, so that's how the nutrients are calculated, I find that the 12 muffins are too small!)
