Tasty low-carb and gluten-free pancakes made from ground pecans. Tasty low-carb and gluten-free pancakes made from ground pecans.
Number of Servings: 21


    2 cups pecan halves (toasted and pre-ground are best)
    4 large eggs
    1/4 cup water (add more, as needed)
    1/4 cup oil
    1/2 teaspoon salt
    2 teaspoons sugar
    2 teaspoons baking powder
    1 teaspoon vanilla


Combine ingredients in a blender. (Substitute egg whites for a reduced-fat, lower-calorie pancake.) Thin as needed with water to get a good pouring consistency. Cook on medium heat - a silver dollar cooking pan works very well. Makes about 21 three inch pancakes.
