Ingredients

    1 Egg
    2 Egg white
    3/4 cup sugar
    1 cup nonfat milk
    1/4 cup applesauce
    2 cooked, pureed carrots
    2 cups Arrowhead mills Gluten free all purpose baking mix
    For topping
    1/4 cup unpacked brown sugar
    1 Tbsp melted butter
    1 Tbsp Arrowhead mills Gluten free all purpose baking mix
    2 Tsp cinnamon

Directions

Combine egg, sugar, milk and applesauce. Add flour. Mix well and pour into greased muffin tins. Top with brown sugar mix. Bake at 375 for 18-20 minutes.
