    ¼ c Shedd's Spread Country Crock Light (Soft)
    ½ c Honey
    1 lg Egg
    1 c Carrots, shredded
    ¼ c Raisins
    1/3 c Walnuts
    2T. Orange Juice Concentrate Frozen
    1 c Flour, Whole Wheat Pastry
    1 ½ t. Baking Powder
    ¼ t. Salt
    1 t. Cinnamon, ground
    ½ t. Ginger, ground
    ½ t. Nutmeg, ground

    OPTIONAL (included in calories)
    1/2 Raisins
    1/2 Walnuts (chopped)

Directions

Preheat oven 350'

Mix all ingredients. Pour into 8x8 baking pan
Bake 350' 35-45 minutes
