Introduction

Delicious cholesterol-free pancakes that add fiber and protein to keep you full through lunchtime! Syrup is optional because the surprise of biting into a piece of strawberry adds a shock of sweetness itself! Ingredients

    1 cup Heart Smart Bisquick mix
    2 tbsp ground flax meal
    1 medium banana, mashed
    3/4 cup unsweetened soy milk
    4 strawberries, diced
    2 packets Truvia sweetener
    1 large egg white

Directions

Mix all ingredients except strawberries until combined. Gently fold in diced strawberries.

Measure a 1/4 cup of batter and put in a pan on medium heat. Cook until bubbles pop, then flip. Cook on the other side until golden, about 1 minute.

Makes 6 pancakes, 2 pancakes per serving.

    The flax is a great add-in. I regularly "get creative" with making pancakes! Try shredding an apple into the batter & add some cinnamon. Recently I added pureed yams with cinnamon & nutmeg & allspice. Everyone loved them and no one was the wiser.

    This sounds great. I tried the Fiber One pancake mix today and I wasn't impressed at all, I will defintely make this.
