Ingredients

    (1) Whole Garlic Clove chopped
    (4) tbsp Olive Oil
    (2) 10 oz or (1) Family Size Bag Frozen Spinach
    (1) tbsp salt
    (2) Medium Potatoes peeled and diced

Directions

Makes 8 Servings

Peel and Chop up one whole garlic clove into small pieces.

Peel and Chop (2) Potatoes into bite size pieces.

Heat Olive Oil over low heat in large pot. Add chopped garlic and let cook for 1-2 minutes until fragrant, do not brown or burn.

Add 1 cup of water to stop the cooking of the garlic, and 1 tbsp salt.

Add all the spinach, the potatoes, and cover with water allowing for 1" above ingredients.

Simmer on medium heat stirring occassionaly until potatoes are tender.

Add salt/pepper to taste.

    A good start to a dish; somewhat bland but very easy to season to your taste. Will make again and try with fresh kale. - 1/4/12
