Ingredients

1 Tbsp butter
1 medium onion, diced
4 slices turkey bacon, chopped into small pieces
2 cups cooked broccoli, chopped into smaller but not tiny pieces, drained
1 cup mushrooms, diced
4 large eggs
1/2 cup part skim ricotta
1/2 tsp salt
1/2 tsp pepper
1/2 tsp nutmeg, ground
2 cups 2% reduced fat cheddar jack cheese, shredded
Directions
Preheat oven to 350. Melt butter in a frying pan (nonstick) and saute onion and bacon until golden brown. Add broccoli and mushrooms and continue to fry. Set aside to cool.
Beat eggs, ricotta, salt, pepper and nutmeg in a bowl. Fold in cheddar jack and mix, then fold in cooled veggies and mix. Spray 9 inch pan with nonstick cooking spray or rub with a little extra butter. Pour filling into pan and bake for 45 minutes until knife comes out clean from center. Cut into 8 pieces and enjoy!
