This Slow Cooker soup is delicious. This Slow Cooker soup is delicious.
Number of Servings: 8

Ingredients

    4.5 Cups vegetable broth
    28 oz can Diced Tomatoes
    15 oz can salad beans - drained
    2 carrots - diced
    1 celery stalk - chopped
    1/2 cup onion - diced
    1 t dried thyme
    1/2 t dried sage
    2 bay leaves
    2 cups Ditalini or other pasta - cooked
    1 medium zucchini - chopped

Directions

Combine broth, tomatoes, beans, carrots, celery, onion, thyme, sage & bay leaves in slow cooker. Cover and cook on LOW for 6-8hrs. or HIGH for 3-4 hours.

In last 1/2 hour, add ditalini & zucchini. Remove bay leaves - season to taste with salt & pepper. Garnish with basil - and/or parmesan cheese.
