Ingredients

1.5 pounds of boiled red potatoes, with skin (about 3 large or 4 medium)
1 pound can of garbanzo beans (chick peas)
1 large stalk of celery, sliced thin
1/4 cup of red onion, chopped fine
2 Tbsp minced fresh parsley
4 Tbsp canola oil
4 Tbsp white vinegar
4 slices of bacon, fried crisp, drained and crumbled
1/4 tsp. freshly ground pepper
salt to taste
Directions
Scrub and boil the red potatoes. Cool, then cut with the skin into 1/2" cubes. Drain and rinse a can of garbanzo beans. Thinly dice a large stalk of celery. Finely chop 1/4 cup of red onion. Mince fresh parsley. Fry the bacon, drain and crumble.
Put all ingredients into a large salad bowl, add the remaining ingredients and mix evenly. Chill, covered, for several hours.
