Introduction

Use this blend on any "low and slow" kind of roast you are making! I add some red pepper flakes to give it a kick, but then again, I like everything spicy. Enjoy! Ingredients

    • 1 teaspoon whole cumin seed
    • 1 teaspoon whole fennel seed
    • 1 teaspoon whole coriander seed
    • 1 tablespoon chili powder
    • 1 tablespoon onion powder
    • 1 tablespoon paprika

Directions

Place cumin seed, fennel seed, and coriander in food grinder and grind fine. Transfer to a small mixing bowl and stir in chili powder, onion powder, and paprika. Sift the rub evenly over the meat and then pat it onto the meat making sure as much of the rub as possible adheres. More rub will adhere to the meat if you are wearing latex gloves during the application. Use .5 tablespoons per lb. of meat. Entire batch makes enough for a 6-8 lb. roast. This recipe assumes your chili powder is salted; if not, you will definitely want to add some salt to compensate.
