Introduction
I've done this receipe with cottage cheese, but I didn't have any on hand today so I made it with greek yogurt instead and they turned out awesome! The kids loved these pancakes and they had no idea that they were healthy! Ingredients
-
2 cups Quaker Old Fashioned Oats (ground in food processor)
1 cup Chobani Greek Yogurt
2 Eggs
1 cup water
seasonings I had on hand:
salt
pepper
cinnamon
nutmeg
splenda
Directions
I put the Oats in my magic bullet and ground them til they were pretty much powder...some oat pieces left but not much.
Then I added the eggs, greek yogurt, seasonings and water and stirred til well blended. I added enough water to make it like pancake mix consistency.
Then I started dropping large spoonfuls onto the griddle and cooked like pancakes. They were a little thicker than regular pancake mix so more water may be needed.
I probably should have added more water to mine, but they turned out fine.
This batch made 16 3inch pancakes.
