Ingredients

    3 cups diced asadero cheese (Mexican melting cheese)
    1 cup shredded monterey jack cheese
    1 poblano pepper
    24 oz John Soules beef fajita meat
    8 La Banderita Xtreme Fiber flour tortillas

Directions

Heat poblano pepper under the broiler for five minutes on each side or until it's blackened. Place the chile in a paper sack, close it and let the chile steam for 15 minutes. After this time, rub off the skin, remove the stem and seeds and cut into strips.
Preheat oven to 350 degrees.
Add fajita meat to skillet and cook until warm. Lightly grease a casserole dish and add the cheese. Top with meat and pepper. Cook for 15 minutes or until bubbly.
Spoon onto tortillas. Serve immediately. Makes 8 servings.
Note: if you can't find asadero cheese, chihuahua cheese or muenster cheese.
