Introduction

I have said that I could eat peanut butter and dirt. I love the flavor of peanuts and together with the slaw and game hens, these recipes are really good. It fairly simple and makes a great meal for entertaining. It looks really impressive! Cutting the backs out of the hens really make them easy to grill. Ingredients

    Marinade for Hens:
    1-6 oz can frozen orange juice concentrate
    1-cup pineapple juice
    6 oz-soy sauce
    2-cloves garlic-chopped fine
    ½ -TSP-fresh ginger, peeled and minced
    2-TBL-hoisin sauce
    1-TSP sesame oil
    2 –TBL lemon juice
    1-TSP dry mustard

    4-game hens-cut backs out with poultry shears and flatten out. You can also cut completely in half if you desire.

    Peanut Broccoli Slaw:
    1-bag broccoli slaw mix
    1-cup green onion-sliced on diagonal
    1-cup peanut halves
    6-oz thin spaghetti or vermicelli
    ½-red pepper cut into thin strips

    Peanut Dressing:
    ½-cup chunky peanut butter
    ½-cup chicken broth
    2-TSP honey
    1/4 –cup soy sauce
    3-TBL seasoned rice vinegar
    3-TBL sesame oil
    1/2–cup heavy cream

Directions

Marinade for Hens:
Mix all ingredients together and place in a plastic zip bag. Place hens in bag and marinate for at least 6 hours. To cook hens: remove hens from refrigerator for 30 minutes, to allow hens to warm up before grilling. Grill hens bone side down until juices run clear when pierced with a fork. Cook for 45-minutes. Don't overcook and dry out hens.

Peanut Broccoli Slaw:
Cook thin pasta until al dente. When pasta is done cooking rinse with cold water. Cut veggies. In a large bowl place pasta, broccoli slaw mix, peanuts, green onions and red pepper. Toss with Peanut Dressing.

Peanut Dressing:
Whisk all ingredients together.

To serve:
Place Peanut Broccoli Slaw on plate and place game hens on top of slaw. Delish!
