Ingredients

1/2 Chopped Onion
3 Garlic Cloves minced
2 cups Brown Rice
1 medium potato diced
Echrich Turkey Smoked Sausage- one large link cut in half
AND sliced thin
1 tsp Mrs. Dash for a little extra zing
1 Tbsp olive oil
Directions
Makes 4 equal servings that are ABOUT 1 cup each.
First, dice the potatoes and place in a pan in boiling water for 20-30 minutes to soften. Immediately after starting the potatoes in water on the stove, start the brown rice in a rice cooker or in another pan on the stove- whichever you need to cook it. chop onion and mince the fresh garlic, get large frying pan ready. Wait until there's about 10 minutes left for the potatoes to be done softening. Then heat the large pan on LOW with 1 Tbsp olive oil and add the onion and garlic. Strain and add potatoes. Sprinkle on the Mrs. Dash. You may need to add a cup of water so the onion and garlic don't burn if you feel the heat is too high.
When the rice is starting to look much more done- has about 5-10 minutes left of cooking, add the cut and sliced sausage to the potato-onion-garlic pan. Up the heat to medium if you had to add water so the water will evaporate faster. Once the rice is done and the water (if you had to add any) is mostly evaporated, add the rice to the pan and mix it all together. Enjoy!
