Number of Servings: 4

Ingredients

    2 garlic cloves
    1/2 cup bottles roasted red bell peppers, drained
    1/4 cup fat free mayo
    1/2 teaspoon salt
    1/8 teaspoon crushed red pepper
    1 1/2 pounds sea scallops
    1/4 teaspoon ground black pepper
    2 teaspoons olive oil

Directions

1. Process garlic in food processor until finely minced. Add roasted red bell peppers, mayo, 1/4 teaspoon salt and crushed red pepper. Process until well combined.

2. Pat scallops dry with paper towels. Sprinkle with remaining 1/4 teaspoon salt and black pepper.

3. Heat oil in a large nonstick skillet over medium high heat. Add scallops to pain and cook 2 to 3 minutes on each side or until browned. Serve scallops immediately with sauce.
