Introduction

This is my version of chicken fried rice, substituting brown rice for white and using mainly egg whites rather than whole eggs. I incorporate random frozen veggie bags to add fiber and make you full faster. Ingredients

    Serves: 6-8
    Meal Ready in 20-25 min

    1 can Swanson Chicken Breast Chunks (in water)
    2 cups Uncle Ben's Brown Rice
    4 egg whites
    2-3 whole eggs
    1-2 Bags favorite frozen veggies (mixed, asian medley, etc)
    1 tbsp Olive Oil OR Olive Oil Cooking Spray
    Chicken Broth (optional)
    Soy sauce (as desired)

    Microwave Brown Rice (9 minutes)
    Microwave Steamfresh veggies (6-10 minutes)
    Spray pan with Olive Oil Cooking Spray
    Combine Rice, Veggies & Chicken over Med/High Heat
    Pour eggs evenly over rice
    Mix until eggs are cooked
