Ingredients

1 Egg
2 tbsp Applesauce, unsweetened
2 tbsp sugar free vanilla Torani syrup (or any flavor you want really)
3 tbsp Fat Free Milk ( I use over the moon chocolate milk in mine)
1 scoop (abt 35 grams) of your favorite protein powder ( I use either BSN Lean Dessert or Syntrax Nector Sweets -play around with flavors! Ive used chocolate, vanilla bean and banana pudding so far. Only warning is that I have found though that 100% hydro whey doesnt work with these things - they get rubbery.)
3 tbsp Arrowhead Multigrain Pancake and Waffle Mix

mix all ingredients EXCEPT the fruit spread in a 4 cup measuring cup (or other large mug/bowl.
Cook on high in microwave approx 2 minutes (2 min 15 seconds in mine, but check!! Cake should be firm but not rubbery. Should pop right out onto a plate.)
I slice the cake in half horizontally when its done cooking, add the apricot spread, replace the top half and let it melt in. Then cut the cake in half vertically for two servings - you can add fresh fruit, or a little whipped topping... whatever you want. Personally, I like it with just a little fruit spread
