Ingredients

    1 pound of new potatoes, washed and cut into cubes
    1/4 stick low fat margaraine
    1/4 c. of shredded cheddar cheese
    1/4 c. of fresh bacon bits
    1 packet of Hidden Valley Ranch dressing mix

Directions

Put cut potatoes into a big ziplock bag with hidden valley dressing and shake until well coated. Pour into a baking dish and put pats of margarine all over the potatoes. Bake covered, for 30 minutes on 400 degrees. Remove cover and sprinkle cheese and bacon bits over top. Broil for the last 15 minutes.

Great with salmon or pork.
