Ingredients

    Celery, raw, 1 cup, diced
    Baby Carrots, raw, 5 medium sliced
    Red Ripe Tomatoes, 1 medium whole diced
    Banana Hot Pepper rings, 5, diced
    Tofu, medium firm, 85 gram diced
    Garlic Minced - Derlea, 1 tsp
    Omega-Oil, 2 tsp
    Bragg All Purpose Liquid Soy Seasoning, 0.5 tsp
    Lemon Juice, 2 tsp
    Bragg orgnaic Apple Cider Vinegar, 2 tsp
    Cajun Seasoning, 0.25 tsp

    Spinach, fresh, 1 cup

    Avocado, half
    Kalamata Olives, 2, pitted and diced
    Tzatziki Sauce, Pita's, 2 tbsp
    PC Extra Chunky Hot Salsa, 1 tbsp

Directions

Throw first 11 ingredients into a non-stick pan on high heat and cook for about 5 minutes, just until veggies start to soften but are still crunchy. Add spinach, remove from heat, and stir until spinach is softened. Pour into a bowl and top with avocado slices, olives, tzatziki and salsa. Makes one serving.
