Ingredients

1 cup quinoa flour (I ground my own with a coffee grinder)
1/2 cup millet flour
1/2 cup sorghum flour
1/2 tsp xanthan gum
1/2 tsp baking soda
1 medium pear
1/2 medium banana
The above created about 1 cup of puree
1/2 cup almond milk (or milk or other substitute)
1 tbsp apple cider vinegar mixed in
2 tbsp olive oil
1 egg
1/2 cup raisins
Directions
Whisk together flours, soda, and gum.
Puree fruits
Sour milk with vinegar.
Add fruits, soured milk, olive oil, and egg to flour mix and stir together until moistened.
Fold in the raisins
Pour into muffin tins and bake at 350F
I made mini-muffins, and the cooked in about 15 min/batch
This recipe made 30 mini muffins
