Ingredients

    1 cup dried whole wheat elbow macaroni
    1 can petite diced tomatoes, undrained
    1 can tuna in water, drained
    1/2 to 1 cup sliced mushrooms
    1 tablespoon minced garlic
    1 teaspoon Italian seasoning
    2 tablespoons Red Wine Vinaigrette salad dressing
    Black pepper to taste
    Crushed red pepper to taste
    1 tablespoon extra virgin olive oil

Directions

Cook pasta according to directions. Meanwhile, saute garlic in olive oil; add Italian seasoning, red pepper, mushrooms. Cook just a few minutes until mushrooms soften. Add tomatoes, tuna and red wine dressing. Mix with cooked pasta. Sprinkle with black pepper to taste.

    I was looking for a tasty way to use some whole wheat penne. I made your recipe with red peppers, cucumbers and tomatoes and made a cold macaroni tuna salad on a hot summer day. Delicious! - 6/24/10
