Ingredients

    2 slices Whole Wheat Bread
    1 oz. Mozzarella Cheese
    1-2 slices Fresh Tomato
    3-6 leaves Fresh Basil
Fresh Ground Black Pepper, to taste
    1-2 sprays Butter-flavored Cooking Spray

Directions

(1) Thinly slice or grate and weigh cheese; slice tomatoes; pluck basil leaves.

(2) Arrange on one slice of bread half the cheese on the bottom, then add tomato, basil and pepper, then the rest of cheese on top. Place other slice of bread on top of the sandwich. (When the cheese melts, it will hold both slices of bread together, plus will envelop the tomato and basil in warm gooey cheese... mmmmmm!)

(3) Heat a skillet over medium-high heat. When hot, lightly coat with cooking spray.

(3) Turn burner down to medium heat, and place Sandwich in skillet. When the bottom is browned to your liking, carefully flip the sandwich. Cook for a few minutes, until the second side is browned and the cheese is thoroughly melted.

(4) Cut sandwich into squares, triangles, or any other fun shape. Plate. Savor. Smile.

* This sandwich is tasty with other items added -- turkey bacon, sausage patty, even hard-boiled egg slices. It's also nice to add other veggies, such as sliced bell peppers, mushrooms, or crated carrots. Change the herbs and spices to suit any additions or other types of cheeses for different flavors (i.e. use cheddar cheese, tomato, and sliced jalapeno or banana peppers to make a Mexican flavored sandwich).

Don't forget to add any additions (such as turkey bacon or other meats) to your Nutrition Tracker!
