Ingredients

    12 oz shredded carrots (about 5 medium)
    1 inch piece of ginger, peeled and chopped fine
    1/4 cup chopped green onions
    1 Tbsp soy sauce
    1 Tbsp Mirin

Directions

Shred carrots. In skillet sprayed with cooking spray, add ginger and green onions. Layer carrots on top. Saute until carrots are cooked through, stirring occasionally. Add mirin and cook another minute. Sprinkle with soy sauce before serving.
