Ingredients

4 cups organic rolled oats
1.75 cups organic hard white wheat ground into fine flour/ makes about 2.5 cups of flour
.5 tsp. Hain iodized sea salt
1 cup unsulphured unsweetened fine coconut
.25 cup unsweetened cocoa powder
1 cup of organic unprocessed extra virgin coconut oil melted
(coconut oil melts at 76 degrees F.)
2 eggs
2 tsp. vanilla extract
1.5 cups raw honey or honey that's turned solid
1 tsp organic blackstrap molassas
.77 pound or 12.32 oz. organic dark chocolate chips
Directions
Mix dry ingredients together and set aside. Beat eggs, oil, honey, and vanilla together until creamy. Add dry ingredients slowly while mixing. Mix in chocolate chips.
Using 1/4 cup measure for large cookies or 1/8 cup measure or coffee measure for smaller cookies, drop dough onto stainless steel or glass baking pan. (Hint-if you put an air insulated pan underneath the stainless steel pan, cookies will not as easily burn on the bottom.) Bake large cookies about 20 minutes at 375 degrees F - Small cookies about 10 minutes. Keep an eye on them, though, if your oven is as off as mine is so they don't burn.
Make about 37 large cookies or about 75 small cookies.
