Introduction

Ingredients

    1 cup plus 2 tbsp. white whole wheat flour
    6 1-oz. packages instant regular oatmeal
    1/2 cup sugar
    1 Tbsp. baking powder
    1/2 tsp. salt
    1 cup skim milk
    1 egg
    1/4 cup canola oil
    1 cup blueberries

    Topping:
    1 Tbsp. sugar
    1 Tsp. ground cinnamon

Directions

Makes 12 muffins.

Preheat oven to 425 degrees. Line twelve 2-1/2 inch muffin pan cups with paper baking cups.

In medium mixing bowl combine dry ingredients. In small bowl, using a fork, combine skim milk, egg and canola oil. Fold in blueberries. If using frozen, thaw and rinse before using.

Pour an equal amount of batter into each cup.

Combine sugar and cinnamon for topping and sprinkle evenly over muffins.

Bake for 20-25 minutes (until lightly browned and toothpick inserted in center comes out dry).
