Ingredients

2 pounds lean ground beef (93/10)
1 onion chopped
2 cups brown rice (cooked)
1-10 oz can of 98% fat free cream of mushroom soup (condensed)
1-10 oz can of Rotel Hot diced tomatoes with habaneros
2 tbsp canola oil
1 cup water
16 oz frozen brocolli
salt
pepper
Directions
Preheat oven to 400 degrees.
Saute onion in oil. Add ground beef. Cook beef thoroughly. Drain oil from beef. Add cream of mushroom soup, rotel, velveeta and water to beef. Heat until cheese is melted and mixture is boiling. Add brocolli and simmer for 10 minutes. Add rice and mix until well blended.
Spray a 16x9 inch rectangular casserole dish with cooking spray, Pour meat mixture into the casserole dish and back at 400 degrees for 40-60 minutes.

Good. I took to a group dinner and everyone liked it. I had to guess on how much Velveeta to use as it was only mentioned in the directions but not the ingredients list. I used about 10 oz but a little more would probably be better. - 10/18/10
