Ingredients



    * *Cannelini Beans (or white kidney beans)
    * Canned Tomatoes (I used chopped tomatoes - 1 can)
    * *Onion -- Fresh
    * Olive Oil, 1 tbsp for sauteeing
    * Yellow Sweet Corn, Canned, 1 cup (basically one drained can)
    * *Carrot, raw (2 carrots) cut into chunks
    * *Celery, Fresh (2 sticks)
    * *Vegetable Stock - no salt, .5 cup (this was homemade)

Directions

Sautee onions in olive oil until translucent. Add carrots and tomatoes, and simmer for about five minutes until the carrots begin to soften. Add remaining ingredients and cook for about an hour. This is really for mingling the flavors.

This can be served with a number of meals, and eaten hot or cold. Colorful and tasty!
