Introduction
A refreshing no guilt pasta salad! A refreshing no guilt pasta salad!Number of Servings: 3
Ingredients
Whole Grain penne, 100 grams
Emeril's Italian (Vinaigrette), 3 tbsp
Fresh Mozzarella, 1 oz (remove)
Red Ripe Tomatoes, .5 cup cherry tomatoes
Cucumber (with peel), 0.5 cup slices
SB Turkey Bacon, 3 serving
Directions
Cook pasta by box instructions *it's important to drain then rinse under cold water to stop the cooking process*
Prep, weigh, and measure ingredients ( I weighed ou an ounce of fresh cheese, and cut it up into tiny cubes, cut the cucumber slices into quarters, and halfed the cherrie tomatoes all after they were weighed, or measured.)
Add fresh cucumbers, tomatoes, cheese, to the cold pasta. Mix in Emeril's Dressing *you can use any dressing you wish, just remember to change it in your recipe!*
Add Turkey Bacon last, salt & pepper to taste, and sprinkle with basil leaves.
Store in fridge for at least an hour so everything can soak up the seasoning.
