Introduction

It is not Thanksgiving or Christmas at our house without this traditional dish. We freeze cranberries in season so we can enjoy this dish all year long. Number of Servings: 9

Ingredients

    1 cup fresh whole cranberries
    1/2 cup sugar
    1/2 cup Splenda
    1/2 cup chopped celery
    1/2 cup nuts (walnuts or pecans)
    1/2 orange with peeling on
    1/2 tsp lemon juice
    1/8 tsp salt
    1 small box strawberry gelatin
    1.5 cups water

Directions

Grind the cranberries. Add sugar and splenda an let stand for 2 hours. Add chopped celery, nuts, lemon juice and salt. Mix well. Take 1/2 orange with peeling and grind it also and add to mixture. Mix strawberry gelatin with 1.5 cups boiling water and let stand until cooled off a little. Add gelatin to mixture and put in 9" square cake pan. Makes 9 servings.

Serving suggestion: serve on bed of lettuce with a dab of Miracle Whip or mayo (not included in nutritional content)
