Ingredients

    1 lb. Chicken Breast
    salt and pepper
    1 16 oz jar of Pace Chuncky Medium Salsa
    1 16 oz box of Velveeta (Made with 2% Milk)
    1/2 cup of Fat Free Half N Half
    1 can of Tomatoes-Rotel Diced Tomatoes & Green Chilies (drain some of the juice off)
    10 Misson Carb Balance Tortilla(Soft Taco Size)
    1/2 cup of Sour Cream, reduced fat

Directions

Boil chicken breast in a pot of water, seasoned with salt and pepper for approx. 20 minutes until cooked through.

Let cool and shred or dice chicken into bite sized pieces.

Mix chicken with the jar of salsa.

Melt the Velveeta cheese with Rotel tomatoes and half and half in a sauce pan over med/low heat until smooth and creamy. Careful not to scorch the pan.

Roll the chicken mixture in the tortillas and place them in an 8x10 baking dish (sprayed with Pam).

Pour the cheese mixture evenly over the top of the tortillas.

Sprinkle shredded cheddar cheese over the top if you wish (not calculated in nutritional info).

Bake in a 350 degree oven for about 20 minutes.

Put a tablespoon of reduced fat sour cream on top for garnish.
