Ingredients

1 pie crust
1.25 c. sugar
2 TB flour
3 TB corn starch
1/2 tsp. salt
2 c. nonfat milk
4 egg yolks (reserve whites)
1 TB unsalted butter
1 tsp. vanilla
3 oz. unsweetened chocolate
4 egg whites
pinch salt
pinch cream of tartar
1/4 c. confectioner's sugar
Directions
Prebake pie crust as needed. (For a frozen basic one, this is about 10 min to thaw, and about 10 min to bake and then set aside. You need this ready.)
In medium saucepan mix 1.25 c. sugar, flour, cornstarch and salt. In a small bowl mix together the milk and 4 egg yolks. (Set aside the 4 egg whites). Over medium flame, stirring constantly, mix the milk and egg yolks into the sugar/flour mixture. Bring to a boil, cook for one minute, and then remove from heat.
Off of the heat, stir in unsalted butter, vanilla, and unsweetened chocolate. Pour into pie crust.
In the bowl of a mixer place the egg whites, pinch of salt, pinch of cream of tartar, and mix until foamy. Gradually add in the 1/4 c. confectioner's sugar and mix until stiff peaks form.
Spread meringue topping on top of pie, making sure to reach all the way to the crust. Bake at 350 for approx 15 min or until browned on top.
