Introduction

Similar to a curry chicken salad using tofu. Similar to a curry chicken salad using tofu.

Ingredients

    1 container (18 oz.) firm tofu, baked
    1 cup (225g) non-fat yogurt
    1 apple, chopped
    2 stalks of celery, chopped
    0.5 cup (80g) golden raisins
    1 tsp curry powder
    0.5 tsp salt

Directions

Cut tofu into cubes and bake for about 45 minute, turning occasionally. Chop apple and celery. Add all ingredients in a large bowl and mix. Serve on top of a green salad or as a protein along with rice or other grains.

Makes 4 1.25-cup servings (220g)
