Ingredients

    2 c flour
    3/4 c sugar
    1 1/2 tsp baking powder
    1/2 tsp baking soda
    1 tsp salt
    1/2 c chopped walnuts
    1 egg
    1/4 c vegetable oil
    3/4 c orange juice
    1 1/4 c finely chopped rhubarb

Directions

In large mixing bowl, combine flour, sugar, baking powder, baking soda, salt and nuts. In another bowl, combine egg, oil, and orange juice. Add to dry ingredients all at once, and stir just until moistened. Stir in rhubarb. Fill muffin cups almost to top. Bake at 375 degrees for 20 to 25 minutes.

    My son< who claimed he hated rhubarb thought these were great! I was trying to find smething he could eat that didn't have so many calories/sugar and would add some fiber. - 5/4/08

    This is a great recipe. I've adapted it to use whole wheat flour for half of the flour and I prefer pecans to walnuts, but it's my staple muffin recipe. - 8/17/07

    Absolutely delicious! I used vegan Egg Replacer instead of one egg. My batter came out slightly thick, so I just added a tiny bit more of orange juice. They came out great! Thanks for a wonderful recipe! - 2/22/09
