Ingredients

(all items bought at a farmer's market)
2 Fresh Farm Eggs
Olive Oil
1 tsp rice milk
1/8 tsp (really, just a few dashes will do) tumeric
1 Tbsp Fresh Goat Cheese
6 left over sweet potato fries, diced
3 good sized cremini mushrooms, sliced
3 fresh sage leaves
Directions
Heat large skillet pan on med heat.
Add diced potatoes, sage, and mushrooms to pan to let them sweat and cook a bit.
Whisk eggs, tumeric, and rice milk together in a bowl. get other ingredients ready.
Drizzle oil over pan or spray pan with cooking spray - and make sure that the entire skillet is covered
Pour egg mixture onto skillet and tilt pan to make egg mixture lay flat like a pancake. Let cook 1 minute or less (depending on heat of the pan)
Add ingredients on 1/2 of the egg mixture and let sit for 1 minute.
Flip other side ontop of the mixture and let sit until insides are firm and cheese is melted.
Slide onto plate and serve.
