Introduction

Black Beans, tomatoes, avacados, and lettuce salad with an awesome olive oil dressing. Black Beans, tomatoes, avacados, and lettuce salad with an awesome olive oil dressing.
Number of Servings: 6

Ingredients

    Lemon Juice 3 TBLS
    Extra Virgin Olive Oil 1\3 cup
    Cumin to taste ground cumin
    Salt and Pepper to taste
    1 med onion, chopped
    3 cloves garlic, chpooed
    3 tomatos, chopped
    3 avacados, chopped
    1 can drained and rinsed white beans
    1 can drained and rinsed black beans

Directions

Whisk Lemon juice, cumin, salt, pepper and olive oil together until creamy. Stir in chopped onion, avacado, and garlic. Chop tomatos and add to bowl. Then rinse and drain beans and add to mixture. Let sit for 20 minutes at room temperature. I then use bagged lettuce salad and put this on top. It is divine.
