Ingredients

    1 lb lean ground beef or ground turkey
    1/2 cup stove top stuffing
    1 egg
    3 Tbls skim milk
    1/2 cup Annie's organic ketchup, divided
    1 Tblsp dried onion
    3-4 small to medium red potatoes, cut into bite size chunks
    4 medium carrots, cut into bite size chunks
    2 tbslp butter, melted
    salt and pepper
    olive oil spray

Directions

Spray 9x13 baking pan with olive oil. Put potatoes and carrots in the pan, drizzle with melted butter and sprinkle with salt and pepper. Cover with foil and bake for about 30 minutes.

Meanwhile, mix ground beef, stuffing mix, onion flakes, 1/4 cup ketchup, egg and skim milk. push the vegetables to the sides of baking pan. Place meatloaf in center, bake another hour. During last 10 minutes of cooking time remove foil and pour remaining ketchup over loaf.

Makes about 5 servings.
