Introduction

I like to make this and refrigerate for a few days for fuller flavor. You can also use garbanzo beans in place of the navy beans, and add/remove spices to taste.

Keep in airtight container + serve with vegetables or pita chips.

Ingredients

    3 Tbsp. Olive Oil
    1 small Onion, chopped
    4 Garlic cloves, chopped
    15 oz can Navy beans, drained and rinsed
    3 Tbsp Lemon Juice
    1 Tbsp Rosemary
    1/2 tsp salt
    1/2 tsp ground red pepper
    1/2 tsp crushed red pepper flakes


Directions

Heat oil in skillet, add onion and reduce heat to medium. Saute until tender. Add garlic and cook one minute, stirring frequently (don't allow to brown). Remove skillet from heat and allow to cool to room temperature.

Scrape onion mixture into blender. Add beans and remaining ingredients and puree until smooth.

Serves 5
