Ingredients

    1 cup CarbQuick Biscuit Mix (Low Carb)
    4 T olive oil
    3/8 cup Splenda brown sugar blend
    1 egg
    1/3 cup milk
    1/2 cup Qkr's Old Fash. oatmeal
    1/4 cup molasses
    3 tsp baking soda
    3 T Shaklee soy protein powder
    1 tsp baking soda
    1 tsp ground cinnamon
    1 tsp ground ginger
    1/2 tsp ground cloves
    1/2 tsp dry mustard
    1/4 tsp ground black pepper
    3 T xylitol or Splenda

Directions

Mix all wet ingredients well. Mix all dry ingredients except the last (xylitol/Splenda) very well. Combine. Refrigerate for 2 hrs. Roll this sticky dough into tsp size balls, roll in the 3 T xylitol or Splenda, then smash with glass into small cookies on bake sheet. Bake 10 -12 min @ 350 degrees F, until just firm to touch. They do not raise much. They are delicious. Makes 50-60 cookies. My husband likes them a little burned (no accounting for tastes!)
