Introduction

Ingredients

250g wholemeal flour
3 tsp baking powder
0.5 tsp salt
0.5 tsp cinnamon
0.5 tsp mixed spice
1 whole egg
100g yoghurt
240ml skimmed milk
85g pure fruit spread, no added sugar
200g carrots grated
Directions
First set your oven to 180celcius. Grease 12 muffin tins or use silicone cases.
Collect 2 bowls, 1 has to be large but the other can be of a medium size.
In the larger sift in all of the dry and powdered ingredients (flour, salt, spices and baking powder). Mix well
In smaller bown cracke egg and mix so that yolk is no longer visible.Add milk and yoghurt and mix well.
Add the fruit spread to mixture and stir with a fork. Depending on how thick the spread is then this could take a while, just trust that it will finally get there! It doesn't matter if a few lumps are still visible just as long as the majority has been broken down.
Make a well in the middle of the dry mixture and pour in the wet. Stir well - there will be still some lumps but make sure that there is no visible flour, esp. hiding at the bottom of the bowl!
Add carrot to the mixture and mix in just enough to distribute it. Raisins can be added here, as can any other nuts and add in ingredients.
Distribute mixture between the 12 cases and cook in pre-heated oven for 30-40 mins. I cannot guarentee the cooking time as our oven is a bit weird! Just keep an eye on them - they should be very moist but not gooey.
Let them cool down before enjoying! Yum yum...
