Small Pearl Tapioca Pudding with Xilitol Small Pearl Tapioca Pudding with XilitolNumber of Servings: 6
Ingredients

1/2 c. reese tapioca
21/2 c milk
1/4 t salt
1/2 c xylitol or sweetener of choice
2 eggs separated
1 t vanilla extract
Directions
1. Soak tapioca in 2 c water overnight. Drain water.
2. in double boiler, heat milk just until no longer cold. Add salt and tapioca. heat until small bubbles appear at sides of pan. Cover, turn heat to low and cook 1 hr.
3. Separate egg whites from yolks. Beat egg yolks and xylitol together until light yellow. Add a little of th hot mixture to egg yolks and blend. Add egg yolk mixture to hot milk, stirring constantly. Place double boiler over medium heat and cook until tapioca mixture is thick - approximately 15 min.
4. Eat egg whites until stiff. Slowly fold the tapioca misture into egg whites. Stir in vanilla. Serve warm or chilled.
Makes 6 to 8 servings.
