Introduction

Great for a easy weekday night dinner or a tasty picnic snack. I've used tasty cheese but use Light Tasty if you have it! Ingredients

    150g (1 cup) Self-raising flour
    4-6 Zucchini (depending on size) grated
    1 brown onion
    5 eggs, beaten with salt and pepper
    2 carrots, grated
    100g tasty cheese (roughly equals 1 cup grated)
    4 bacon rashers, chopped and trimmed of fat

Directions

Shred all the ingredients, mix together in a large bowl.
Cook onion and bacon in small pan and add to mixture.
Beat eggs and add to vegetable mix. Stir thoroughly. Gradually add flour and around 50g of the cheese.

Combine all ingredients in oven proof dish. Bake in oven for until brown on top. You can add the rest of cheese for extra crispyness or just stir it in.
