Found this recipe in Holly Cleggs trim and terrific recipe book I added a few ingredients to make it to my taste.
You can also serve over pasta for a change.

Ingredients

    Louis Rich low fat Turkey Smoked Sausage, 8 oz
    Chicken Breast, no skin, 8
    Shrimp, cooked, 4 oz
    Salsa, 4 cup
    Thyme, ground, 1 tsp
    Bouillion Reduced Sodium Chicken flavor, 2 serving
    Green Onions, raw, .1/2 cup, chopped
    Pepper, red or cayenne, .1/4 tsp
    White Rice, long grain 4 cups cooked
    Sour Cream, reduced fat, 1 cup

Directions

In a non stick large skillet, cook sausage, add salsa, shrimp, chicken, thyme,bouillion and 1/2 of green onion. cook for 10 minutes on medium heat. In seperate bowl mix sour cream and cayenne. Serve over 1/2 cup rice and a dollop of sour cream and green onions
